Cauliflower Gnocchi Sheet Pan Dinner

Cauliflower Gnocchi Sheet Pan Dinner is low prep, quick and healthy dinner.  This recipe uses Trader Joe's cauliflower gnocchi to make this delicious Italian dinner suitable for busy weeknight family dinners.

  • Preheat oven to 425 degrees F.
  • Line a baking sheet with parchment paper. Or use a nonstick spray and mist it on the baking sheet.
  • Drizzle the gnocchi and veggies with olive oil ( or spray) and seasoning,  salt and pepper.  Make sure everything, especially the gnocchi, is seasoned well.
  • Spread the gnocchi along with tomatoes, peppers and onions on the baking sheet. 
  • Place the baking sheet in the oven and roast for 20 to 25 minutes. Check and toss the ingredients around a bit halfway during cook time.
  • You want the tomatoes to be bursting and the peppers to be slightly brown. Take it off the oven.
  • Sprinkle with the lemon juice, fresh herbs and parmesan cheese or nutritional yeast. Serve the gnocchi dinner immediately. Bon Appetit!

Notes

HOW TO MAKE CAULIFLOWER GNOCCHI IN THE AIR FRYER?

Arrange the seasoned cauliflower gnocchi and and vegetables on greased air fryer basket. Spray some oil on top. Choose 350 F for 15 minutes. Check and air fry for additional 10 minutes if needed.

IS CAULIFLOWER GNOCCHI VEGAN AND GLUTEN FREE?

For this recipe, I have used Trader Joe's Frozen Cauliflower Gnocchi. Cauliflower, cassava flour, potato starch, extra virgin olive oil, and sea salt are the ingredients. So this is vegan and gluten free Gnocchi.
