Mediterranean Appetizers - Mezze Platter

Mediterranean appetizers are simple and flavorful, so it’s easy to make them a centerpiece at a healthy party. Combine the glorious tastes of Greece, Italy and Middle East in one delicious Mezze platter!

Ingredients

  • 1 16 oz. Hummus - See notes to make homemade hummus
  • 1 6 oz. Harissa or Roasted Red Pepper -Walnut Dip
  • 1 10 oz. Manzanilla Olives
  • 1 10 oz. Marinated Artichokes
  • 2-3 cups Assortment of cut Veggies like cucumbers carrots and radishes
  • 1 packet of pita bread cut into triangles and warmed

Instructions

  • Arrange a big serving platter and few serving bowl. Fill the bowls with hummus, red pepper spread, marinated artichokes and olives. Drizzle some olive oil over hummus for extra authentic feel.
  • Artfully arrange all the veggies and pita bread pieces around the bowls. Replenish and serve as needed.
  • You can mix and match the veggies and pita pieces as a base. You can also layer and fill the pita pockets to make a fabulous sandwich.
  • Remember, there really is no right or wrong way to create and enjoy mezze platter. Best way is to share and enjoy it with lively hearty conversation !

How to Make Homemade Hummus

  1. In a blender, add garlic, drained garbanzo beans , lemon juice, tahini sauce, cilantro and de-seeded jalapeno pieces and salt . Blend to smooth by adding little water.
  2. When you see mixture starts to form a paste, change the blender to pulse. Slowly pour olive oil through the spout while you are on pulse setting of the blender. It adds extra fluffy and creamy texture.
  3. Change the setting to blend and continue till mixture is creamy and well mixed. Hummus is ready to serve. Adding olive oil while blending adds extra creaminess so you can almost skip the tahini sauce if its not easily available.
  4. Your creamy, velvety, yummy hummus is ready!

How to Cook Dry Chickpeas In Instant Pot

  1. You soak the dried chickpeas for few hours and then pressure cook them in InstantPot on BEAN setting.
  2. Use enough water to cover the beans entirely. Use BEAN setting and let it cook automatically. If you want to use MANUAL or PRESSURE COOK buttons, choose 12-15 minutes for soaked beans and 25-30 minutes for dry - washed beans.
  3. After they are cooked, let them cool down completely. Then freeze them in individual portion sizes.
  4. It's essentially like using canned chickpeas whenever you need them but MUCH BETTER. Instant Pot cooks these dried beans to smooth and soft to utmost perfection !!
