Vegan Green Jackfruit Tacos
Sauted green jackfruit and red onions with avocado, radish, cilantro and jalapeno. Served with roasted corn and chili lime seasoning ..Some seriously robust flavors and colors are making this fieasta.

- 2 cups green jackfruit
- 1 medium red onion cut lengthwise
- 1 teaspoon of cooking oil
- 1 teaspoon cumin-coriander powder
- 1 teaspoon 21 Seasoning Salute all purpose seasoning blend
- ¼ teaspoon red chili powder
- ¼ teaspoon smoked red paprika
- ½ teaspoon jaggery or brown sugar
- Juice of half lemon
- Salt per taste
Turn Instantpot on Saute high. Add oil in main pot. Once oil is heated, add onions and stir well for couple minutes. Add green jackfruit pieces, salt, red chilli powder and cumin-coriander powder. Stir well. Add ¾ cups of water. Mix well.
Cancel sauté mode. Turn Manual 1 min. QPR when done. Open the lid , add lemon juice and mix well
Arrange the tacos using this filling. Additional topping I added this time were cut radishes, red onions, chopped cilantro and avocado. Served it with guacamole, salsa, roasted corn or dipping sauce of your choice !
