Jackfruit Coconut Curry

Ingredients

  • 2 cups green jackfruit shredded use canned or frozen
  • 1 cup shredded coconut
  • 1 medium chopped red onion
  • 1 teaspoon of cooking oil
  • 1 teaspoon cumin seeds
  • 8-10 curry leaves or 2 bay leaves
  • 1/2 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • salt per taste
  • Juice of half lemon
  • chopped cilantro for garnish

Instructions

  1. Turn IP on Sauté high. Add oil in main pot. Once oil is heated, add cumin seeds and curry leaves . Once they are heated, add onions and stir well for couple minutes.
  2. Add green jackfruit pieces, shredded coconut, salt, red chili powder and turmeric powder. Stir well. Add 3/4 cups of water. Mix well.
  3. Cancel sauté mode. Turn Manual 1 min. QPR when done. Open the lid , add lemon juice and mix well.
  4. Your awesome curry is ready ! Serve it with rice, roti, quinoa or as a salad topper ! Enjoy the taste of Tropical paradise.

Directions: Pressure Cooker or Stovetop:

  1. Heat the oil in pressure cooker or in pan on Stove top. Once oil is heated, add cumin seeds and curry leaves . Once they are heated, add onions and stir well for couple minutes.
  2. Add green jackfruit pieces, shredded coconut, salt, red chili powder and turmeric powder. Stir well. Add 3/4 cups of water. Mix well. Close the lid and let it cook for 7-8 min on medium high heat.
  3. If using pressure cooker, close the lid and let cook till 2 whistles about 7-8 minutes. Let it release the pressure naturally. Stir well.
  4. Add lemon juice and mix everything well together. Enjoy the yummy delicious curry !
