Eggs Flamenco : Spanish Style Baked Eggs With Vegetables

Flamenco Eggs is one of those dish, that is simply irresistible delightful dish. This is easy version of making the famous Spanish egg recipe ” Huevos a la flamenca” .

  • 1 lbs. Tri color mini sweet peppers or 1 medium size each red yellow and orange peppers, seeded and thinly sliced
  • 1 tbs olive oil
  • 1 medium red onion finely sliced
  • 3 garlic cloves minced
  • 4 eggs
  • 1 tsp lemon juice
  • 1 tsp 21 seasoning salute or Italian seasoning mix
  • Salt per taste.
  • Crushed black pepper and cayenne pepper for garnish


  1. Preheat oven to 350°F.
  2. Heat the oil in your skillet ( lodge cast iron can go directly into the oven too) . Fry the garlic and onion gently for few minutes. Add the sliced peppers to the skillet and continue to fry for about 5 minutes. Add salt and seasoning. Peppers and onion should be soft. Turn off the heat. Break one egg at a time on 4 spots. Sprinkle little black pepper or cayenne pepper on the egg yolk and around.
  3. Bake in the oven for 12-15 minutes until the white part of egg is clearly visible and lightly set.
  4. Scoop it out and serve warm.
