Eggs Flamenco : Spanish Style Baked Eggs With Vegetables
Flamenco Eggs is one of those dish, that is simply irresistible delightful dish. This is easy version of making the famous Spanish egg recipe ” Huevos a la flamenca” .

1lbs.Tri color mini sweet peppers or 1 medium size each redyellow and orange peppers, seeded and thinly sliced
1medium red onion finely sliced
3garlic cloves minced
1tsp21 seasoning salute or Italian seasoning mix
Salt per taste.
Crushed black pepper and cayenne pepper for garnish
Preheat oven to 350°F.
Heat the oil in your skillet ( lodge cast iron can go directly into the oven too) . Fry the garlic and onion gently for few minutes. Add the sliced peppers to the skillet and continue to fry for about 5 minutes. Add salt and seasoning. Peppers and onion should be soft. Turn off the heat. Break one egg at a time on 4 spots. Sprinkle little black pepper or cayenne pepper on the egg yolk and around.
Bake in the oven for 12-15 minutes until the white part of egg is clearly visible and lightly set.
