Ukad-Spicy Rice Flour Rough

A traditional Maharashtrian recipe prepared by cooking rice flour with sour buttermilk and tempered with mustard seeds, curry leaves and green chilies

  • 2 cups buttermilk
  • 1/2 cup rice flour
  • 3 to 4 curry leaves
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • pinch of asafetida
  • 1 finely chopped green chili or 1/2 tsp of red chili powder
  • 3 tsp oil
  • salt to taste


Directions :

  1. Whisk the rice flour, buttermilk and salt in a bowl.
  2. Heat oil in a pan and add mustard seeds, let it pop for few seconds. Add cumin seeds.
  3. Add the turmeric, asafetida and the curry leaves,
  4. Next, add the chilis and stir well.
  5. Now add the rice flour buttermilk mixture and stir continuously with a spatula.
  6. Add about 2-3 tablespoons water if you can’t stir it easily.
  7. Continue stirring the mix till it becomes thick ( approximately 5 minutes on medium heat)
  8. Ukad is ready ! Serve hot !!
