Air Fryer Roasted Vegetables

Ingredients

  • 1 medium Red bell pepper make bite size pieces
  • 1 medium Orange bell pepper make bite size pieces
  • 1 medium Zucchini make bite size pieces
  • 2 cups Broccoli Florets
  • 1 Tablespoon extra virgin olive oil skip if WFPB
  • 1 teaspoon Italian Seasoning
  • Salt and pepper per taste

Instructions

  • Cut up all the vegetables and add them to a bowl.
  • Next, add in the olive oil and seasonings and mix until well coated.
  • Add the vegetables to the air fryer basket in a single layer. Do not over crowd them.
  • Roast at to 400°F / 200°C for 12 minutes or until they’re cooked all the way. Open and shake the basket halfway through so the veggies cook thoroughly.
  • Remove Promptly. Adjust the seasoning if needed. Serve and Enjoy !

Notes

Cut your veggies as close to the same size as possible. This will help them cook evenly.
Do not overcrowd the vegetables on the air fryer basket. Leave space so hot air circulates properly.
Work in batches if needed. Do only a single layer of roasting at a time.
Shake the air fryer basket halfway through cooking. This will help ensure that your veggies cook evenly.

If you want to make this recipe in the oven

Preheat oven to 400°F / 200°C.  Prepare veggies as step 1 and 2 . Layer them on baking sheet. Put the baking sheet on the middle rack and bake for 15-20 minutes. Check half way through to ensure they are roasting evenly.
