Warm up oil in Sauté pan (I use my cast iron skillet) Add curry leaves. They sizzle and crisp up in few minutes.
Add fennel seeds, sesame seeds and raisins. Keep stirring on low flame for 5 minutes so everything toasts up and raisins swell and puff up.
Add turmeric powder, red chili powder and lemon or lime juice. Mix well. Add rest of the ingredients. Mix well.
On low heat, continue to stir for 8-10 minutes until everything is mixed well and gets heated throught.
Turn off the heat. Let the mixture cool down completely. Enjoy !
You can store completely cool down chivda mix in air-tight container for 2 weeks.
Please make this recipe on low to medium flame since ingredients can burn quickly. Always keep stirring while making it so they roast nicely.
