Savory Multigrain Waffles

Savory Multigrain Waffles are fusion twist to ever so popular Indian dosa and classic breakfast waffles. These savory and easy waffles will become your favorite breakfast or brunch recipe. This 5 ingredient recipe is vegan and gluten free.

PREPARE DOSA BATTER :

  • Wash all the ingredients and soak them in water for 8 -10 hours. Drain the water. Using a grinder or mixer,  grind all soaked grains to smooth puree. Add little water as needed.
  • Keep the ground batter in warm dark place for fermentation for about 12 hours. Mix well, add the salt before use.

HOW TO MAKE DOSA WAFFLES

  • Preheat your waffle maker and spray some cooking oil or rub a little oil on.
  • Pour the fermented batter onto hot waffle maker. Close the lid and cook until golden brown.
  • Carefully remove cooked waffles. Serve with Chutney and sambar. Enjoy

Notes

COOKING TIME DOES NOT INCLUDE TIME TO MAKE AND FERMENT THE BATTER. If you want to make instant dosa batter, grind all the grains and lentil with water. Add 1 teaspoon of lemon and baking soda. Let it sit for 10 minutes and use the batter.
You can add finely chopped tomatoes, onions, carrots and other vegetables in the waffle batter. You can spice it up using ginger garlic paste,  green chilies and cilantro.
The batter should be thick but pourable, ( honey like consistency) Don't make it very watery and runny.
You can also use the batter straight from the refrigerator. Unlike dosa making, it doesn't need to be at room temperature.
Adjust the cooking time based on the type of waffle maker you are using.
If you want to make classic original dosa batter, use 2 :1 rice and dal ratio. You can also substitute other grains of choice. Make sure to season the batter with salt before cooking.
