Egg Bites Recipe in Instant Pot or Air Fryer

Ingredients

  • 6 large eggs
  • ½ cup cottage cheese
  • ½ cup shredded cheddar or mozzarella cheese
  • 2 Tablespoons milk
  • ½ cup chopped sweet bell peppers
  • ¼ cup chopped onions
  • ¼ cup chopped spinach
  • ½ teaspoon seasoning
  • Salt and pepper to taste

Instructions

Prepare Egg Mixture

  • In a mixer or blender, add eggs, cottage cheese, seasoning and milk. Blend till eggs are well incorporated.
  • Pour the mixture into the mixing bowl. Add shredded cheese and half of the veggies. Mix well. Gently whisk to combine.

How To Make Air Fryer Egg Bites

  • Spray the silicone molds with oil. Pour the egg mixture into each of the silicone molds. Only fill ¾ of the mold since eggs will expand on cooking.
  • Sprinkle in the remaining half of all of the veggies on top.
  • Cook the egg bite cups for 12-15 minutes at 300 degrees Fahrenheit. Insert a toothpick in the center. When the toothpick comes out clean, the eggs have set.
  • Remove promptly after cooking. Serve warm and enjoy !

How To Make Instant Pot Egg Bites

  • Pour 1.5 cups of cold water into the inner pot of the pressure cooker and place a trivet inside the inner pot.
  • Pour the egg batter  as described above.  Pour it into the egg molds, dividing the mixture evenly. Only fill ¾ of each mold.  Cover the silicone mold tightly with foil and place it on the trivet.
  • Close the lid.  Vent in Sealing position. Choose cook time for 9 minutes on high pressure. Once cooking time has elapsed, let the pressure release naturally for 10 minutes.
  • Remove the egg bite mold from the inner pot and let rest for 2-5 minutes. Remove the foil. Then flip the mold upside down onto a plate. Egg bites should just slide off.  Serve and enjoy !

Notes

Cooking time might vary slightly depending upon the size of mold and brand of the air-fryer.
Do not use the plastic cover that comes with the silicone molds in the air fryer.
Only fill ¾ of the egg mold with ingredients.  Eggs will expand and rise upon cooking.  So leave some space on top.
To avoid spillage,  I recommend you place the silicone molds in the air fryer before pouring in the egg mixture. This way you don’t have to move the filled cups.
Whisk the eggs until the yolks are separated.  You should see no bits of white or yolk.
Use cooked veggies or  quickly make them in the microwave for a minute before adding to the egg mixture. Raw veggies don't cook properly in egg mixture.
This recipe works best at 300 degrees Fahrenheit. We have tested it on several different temperatures but anything higher than 300 degrees caused the eggs to brown much too quickly on top.
Don’t add too many mix-ins or the egg bites won’t hold together.
