Air Fryer Zucchini No Breading

Air fryer zucchini no breading recipe makes crispy caramelized zucchini. This recipe is healthy, quick, requires few ingredients and is perfect for a low carb side dish or snack.

Ingredients

  • 1 pound zucchini about 2 medium
  • 1 Tablespoon Olive Oil or Oil Spray
  • 1 teaspoon all purpose seasoning
  • Salt to taste

Optional Garnishes

  • 2 Tablespoon grated parmesan cheese use plant based version for vegan
  • 1 Tablespoon herbs - dried or fresh - rosemary basil, parsley, thyme, oregano or cilantro
  • 1 Tablespoon lemon juice
  • ¼ teaspoon ground black pepper red chili flakes

Instructions

Air Fryer Instructions

  • Cut zucchini into ¾" chunks.
  • Sprinkle some salt and let it sit for few minutes. It will release some water, tap it dry with paper towel.
  • Add seasoning and oil. Mix well.
  • Place zucchini into the air fryer basket in a single layer.
  • Set temperature to 400 degree Fahrenheit and cook 7-10 minutes or until zucchini reaches desired texture.
  • Open the air fryer half way through,  shake the basket and continue to cook further.
  • Once roasted, serve with desired garnishes. Enjoy ! 

Oven Instructions

  • Pre heat oven to 400 degree Fahrenheit.
  • Cut zucchini into ¾" chunks. Sprinkle some salt and let it sit for few minutes. It will release some water, tap it dry with paper towel.
  • Add seasoning and oil. Mix well.
  • Place zucchini onto the parchment paper lined baking sheet in a single layer. Put it in the oven on the middle rack.
  • Bake for 12-15 minutes or until zucchini reaches desired texture.
  • Open the oven half way through,  shake the baking sheet and continue to bake further until it becomes golden crisp and charred.
  • Once roasted, serve with desired garnishes. Enjoy ! 

Notes

Storage and reheating
  • Let it cool down completely and then store in an airtight container. You can keep it in the fridge for up to 4 days.
  • To reheat roasted zucchini, add a single layer on baking sheet and heat at 400 degree Fahrenheit for 3-5 minutes.
  • Since zucchini is a high water content vegetable, I do not recommend freezing it. It will get soggy and mushy when it freezes and will not become crispy when reheated.
