Air Fryer Zucchini No Breading
Air fryer zucchini no breading recipe makes crispy caramelized zucchini. This recipe is healthy, quick, requires few ingredients and is perfect for a low carb side dish or snack.

- 1 pound zucchini about 2 medium
- 1 Tablespoon Olive Oil or Oil Spray
- 1 teaspoon all purpose seasoning
- Salt to taste
Optional Garnishes
- 2 Tablespoon grated parmesan cheese use plant based version for vegan
- 1 Tablespoon herbs - dried or fresh - rosemary basil, parsley, thyme, oregano or cilantro
- 1 Tablespoon lemon juice
- ¼ teaspoon ground black pepper red chili flakes
Air Fryer Instructions
Cut zucchini into ¾" chunks.
Sprinkle some salt and let it sit for few minutes. It will release some water, tap it dry with paper towel.
Add seasoning and oil. Mix well.
Place zucchini into the air fryer basket in a single layer.
Set temperature to 400 degree Fahrenheit and cook 7-10 minutes or until zucchini reaches desired texture.
Open the air fryer half way through, shake the basket and continue to cook further.
Once roasted, serve with desired garnishes. Enjoy !
Oven Instructions
Pre heat oven to 400 degree Fahrenheit.
Cut zucchini into ¾" chunks. Sprinkle some salt and let it sit for few minutes. It will release some water, tap it dry with paper towel.
Add seasoning and oil. Mix well.
Place zucchini onto the parchment paper lined baking sheet in a single layer. Put it in the oven on the middle rack.
Bake for 12-15 minutes or until zucchini reaches desired texture.
Open the oven half way through, shake the baking sheet and continue to bake further until it becomes golden crisp and charred.
Once roasted, serve with desired garnishes. Enjoy !
Storage and reheating
- Let it cool down completely and then store in an airtight container. You can keep it in the fridge for up to 4 days.
- To reheat roasted zucchini, add a single layer on baking sheet and heat at 400 degree Fahrenheit for 3-5 minutes.
- Since zucchini is a high water content vegetable, I do not recommend freezing it. It will get soggy and mushy when it freezes and will not become crispy when reheated.
