Turmeric Lemon Rice + Pickled onion is one of my favorite combos. And when you combine the two, you get an amazingly delicious and super easy dinner. Serve this rice on Lettuce leaves and your presentation kicks up 10 notches !! You will love my fusion take on serving traditional Turmeric Lemon Rice. A beautiful, fancy food that looks straight out of magazines !
However, these lettuce wraps are one of those super easy, quick meals you can throw together during a weeknight. Serve it up for an appetizer at parties, or for a dress up brunch or even weekend get together. I often make them for my book club meets and ladies lunch gatherings ! You seriously can’t go wrong here.

This golden hued beautiful rice is tangy with hint of earthy spices. A one-pot vegetarian dish made with basmati rice along with simple spices, peanuts and good squeeze of lemon.
Which Lettuce Should I choose?
It depends on your taste and texture preference. If you like bit of crunch, use Romain or Iceberg Lettuce. I like to use Artisan Lettuce which has smaller size leaves. It has boat like shape so it can hold the filling well. If you prefer smoother texture, use Boston Bib Lettuce or Butter Lettuce. They have buttery, velvety feel and slightly sweet taste. Using red leaf lettuce will make these wraps even more colorful . Cabbage leaves would also be a yummy substitute. I highly recommend to use the Organic variety if possible.
Can I Make a Complete Meal Out of It?
You absolutely can !! I often make these as a main dish. It’s a complete nutritious meal by itself. To make it more filling or more spread, add some fresh fruit, side of simple soup or sautéed vegetables. You could also serve them as an appetizer. The simplest recipe to pull of for a party that can be made in advance and the guests do a DIY serving them!

For Turmeric Lemon Rice
1 cup cooked Basmati Rice
1 tbsp Oil
1/2 tsp Mustard and Cumin Seeds
6-8 Curry Leaves
1 Green Chili Pepper minced
1 inch ginger root grated
1 tsp Turmeric
1/2 cup roasted peanuts
1 Lemon juiced
1 tsp Himalayan Pink Salt-adjust to taste
For the Lettuce Wraps
1 head of Romain, Iceberg or Bib Lettuce
1/2 cup pickled red onion- finely chopped
Cilantro, Green peppers finely chopped for garnish
To make Turmeric Lemon Rice
Heat oil in a large pot or pressure cooker on medium heat. Once oil feels warm, add curry leaves, mustard and cumin seeds, green chili. Curry leaves will sputter some. Sauté them for a minute. Add peanuts, ginger and turmeric and sauté them well. Add cooked rice. Gently mix all the ingredients well so the rice gets the golden yellow color. Pour lemon juice over the rice. Using a fork, gently mix and fluff the rice. Beautiful turmeric lemon rice is ready.
How To Make Lettuce Wraps
To serve, separate the leaves from your favorite type of lettuce and keep them in ice cold water for 10-15 minutes. Gently pat them dry with paper towel. Add a couple of spoons of the lemon rice mixture. Top it with picked red onions, cilantro and peppers. Fold and enjoy the wraps!
