Growing up in India, my grand-parents’ home had a huge tree in the backyard and we had ample supply of jackfruits and goodies that were made out of it. Over the years, I forgot this fruit ..until recently I rediscovered it in Asian supermarket. Have been seeing several Instagram posts about Green Jack Fruit as an alternative to pulled pork. So I wanted to give it a try …oh boy we, including kids love it. Slightly sweet yet meaty, this is becoming a regular choice of meatless filling for tacos in our casa. Everyone looks forward to these Green Jackfruit Tacos for dinner or quick fix lunches with leftovers.
Jackfruit is one of the rare fruits that is rich in a B-complex group of vitamins. It contains outstanding amounts of vitamin B-6 (pyridoxine), niacin, riboflavin, and folic acid. It is a good source of potassium, magnesium, manganese, and iron. Jackfruit is a good source of antioxidant vitamin-C and rich in dietary fiber too. Combine it with Avocado, red onions, cilantro and you have one nutritional dense meal.
2 cups frozen green jackfruit
1 medium red onion , cut lengthwise
1 teaspoon of cooking oil
¼ teaspoon red chili powder
¼ teaspoon smoked red paprika- which kicks it another notch
1 teaspoon cumin-coriander powder
1 teaspoon 21 Seasoning Salute or (any other all purpose seasoning blend)
½ teaspoon of jaggery or brown sugar
Juice of half lemon
Salt to taste
Directions:
Turn InstantPot on Sauté high. Add oil in main pot. Once oil is heated, add onions and stir well for couple minutes. Add green jackfruit pieces, salt, red chili powder and cumin-coriander powder. Stir well. Add ¾ cups of water. Mix well.
Cancel sauté mode. Turn Manual 1 min. QPR- Quick Pressure Release when done. Open the lid , add lemon juice and mix well. Your taco filling is now ready. Now the fun part of building and customizing your tacos begin.
Arrange the green jackfruit tacos using this filling. Additional topping I added this time were cut radishes, red onions, chopped cilantro and avocado. Served it with guacamole, salsa, roasted corn. You can also add dipping sauce of your choice.
