    Almond Flour Peanut Butter Cookies

    This one bowl easy recipe makes excellent 3-ingredient Almond Flour Peanut Butter Cookies in just 20-minutes. Homemade peanut butter cookies made with almond flour are wonderfully soft, moist, tasty and healthy. They are full of clean and pantry staple ingredients.

    These Vegan Almond flour peanut butter cookies are pure deliciousness. They are grain free, naturally sweetened and gluten free. I am including instructions to make them in the air fryer or oven.

    Almond flour is my favorite choice when it comes to healthy dessert flour. Almond Flour Mug Cake, Almond flour edible cookie dough and Almond flour chocolate chip cookies are our must-try almond flour recipes. Carrot Almond Pudding aka Gajar Halwa also uses it.

    Ingredients

    Only 3 ingredients are needed to make this cookie recipe.

    Almond Flour : I used finely blanched almond flour. You can also use almond meal which has ground almond skin but the texture will be more grainy than almond flour. I typically buy a big bag at Costco. Trader Joe’s also has excellent almond flour.

    Peanut Butter : I highly recommend you use quality salted peanut butter. It should ideally have only 2 ingredients – peanuts and sea salt. Avoid peanut butter where sugar is a main filler.

    Sweetener : I am using maple syrup as a natural sweetener. It adds deep rich and earthy flavors to these cookies. To make these cookies keto friendly, use monk fruit sweetener or erythritol.

    Helpful Hint : Store your Almond Flour in the refrigerator. It retains the nutty taste, extends the shelf life and stops it from going rancid.

    Substitutions

    Add a tablespoon of vanilla extract, peppermint extract or almond extract for additional flavors.

    You can use seed butter especially sun butter or tahini as well as almond butter in place of peanut butter.

    How To Make

    Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper or silicon liner.

    In a medium mixing bowl, add the almond flour , peanut butter and maple syrup. Stir well. Use a fork or silicone spatula to mix all the ingredients together. The dough will be sticky and thick, but just keep mixing until incorporated.

    Using the cookie scoop or a spoon measure, divide the dough into 12 balls and place on your tray. Use a slightly wet fork and press down on each cookie dough balls to form a crisscross pattern on top of each cookie.

    Pro Tip : Unlike other cookies with baking soda or baking powder, these cookies do not spread while baking. So make sure to shape the cookies to the size and thickness you like before you bake them. However, do not spread them too thin otherwise they will not hold the shape.

    Put the baking tray in the oven bake for 10 minutes. ( or air fry at 325 degree Fahrenheit for 10 minutes.) Remove promptly and let them cool for 10 minutes ( without touching them ) After the 10 minute rest, transfer the cookies to a cooling rack for another 5-10 minutes.

    Important Tip : It is very important to let the cookies cool off when they come out of oven. Do not touch them because they will fall apart instantly. They harden and edges get crispy as they cool off.

    Pro Tips

    1. If you are using unsalted peanut butter, add a teaspoon of salt to balance the flavors. I prefer smooth and creamy peanut butter but crunchy also works if you like bits and pieces of peanuts in your cookies.
    2. If you notice that dough is sticking to the fork when making the crisscross pattern, wet your fork with water before pressing into your dough. This will help prevent the fork from sticking to the dough. Dip the fork into water after every few cookies.
    3. Do not over-bake the cookies. 10 minutes is perfect time. They do look soft and undercooked, but they harden as they cool down.
    4. You must allow these cookies to cool off at least 10 minutes when they come out of oven.
